3 Fonteinen was founded in about 1887 as a café and geuzestekerij, a place where geuze is produced by blending old and new lambics, acquired from other breweries. The enterprise was bought by Gaston De Belder in 1953, who expanded it with a restaurant and left it to his sons Armand and Guido in 1982. In 1998, a brewery installation was bought. Apart from using its own lambic, 3 Fonteinen uses lambic made by Boon, Girardin and Lindemans for its geuze. 3 Fonteinen is one of the few remaining geuzestekerijen. The Mijol Club, a literary club, founded by Herman Teirlinck, used to convene in the café

In September 2008, Soren Ericson decided to quit the biochemistry at the University of Auckland and upscale to commercial brewing.
It wasn't until 2008 that thought really took shape though. He did a road-trip through the USA and stopped by every brewpub we passed. This is where he decided that I wanted to give pro brewing a shot when he got back to New Zealand.
For all you Non Zealanders, No 8 Wire (it was the 8th type of wire in the catalogue) is a specific gauge of wire originally used for electric fencing. In New Zealand it's use is much more widespread than that though, Kiwi's have used it to fix just about anything, from cupboards to cars, because it was versatile and readily available. Over the years it has become a symbol of the kiwi ingenuity, their ability to fix any problem no matter how limited the resources.

Anderson Valley Brewing, California

Founded in 1987, the Anderson Valley Brewing Company brewed out of a 10-barrel brew house, located in the lower level of its brewpub, The Buckhorn Saloon. The brewery built their present 30-barrel facility at the corner of Highways 128 and 253, a mile from the center of Boonville. That was in 1996, and this brewery saw them through a dramatic period of growth, which included the introduction of a 12 ounce bottling line and a production level of 15,000 barrels in 1998. In April of 2010 the brewery sold to industry veteran Trey White.

Brewer Menno Olivier brings 12 years of experience to his Brouwerij De Molen, which translates to "The Mill Brewery" as the operation is located in a 300-year-old windmill. He began brewing in his kitchen as a hobby, went on to brew in Westmaas and Amsterdam, and then served as master brewer of De Pelgrim, a Rotterdam city brewery. It was during his time as master brewer that he decided to open a brewery of his own, so he created De Molen in the town of Bodegraven, about 30 km north of Rotterdam. His stainless steel plant has a capacity of 500 liters and he brews in very limited quantities, only about 5hl per year (the same output as some home-brewers!).

Schloss Eggenberg, Austria

Castle Eggenberg is one of the oldest breweries in Austria. It is located in a 12th century castle and has been producing beer, in the former lord’s brewery, on a commercial base since the year 1681. The beer that had been produced was consumed exclusively by the castle owners. Later it was then also sold to surrounding inns, guest houses and pubs. Soon the barrels of beer made it deep into the Salzkammergut and the alpine lowlands.

The Brewery has its own water well of which they are using the water for the beer production. This water is naturally filtered by primary rock and granite and therefore is very soft water, which is a perfect condition for brewing great beer. The brewery also uses exclusively Austrian specialty malts as well as hops that have been grown in the area around the brewery. The currently eleven employees of the brewery produce 5,700hl of beer, but also approx. 4000 visitors tour the brewery every year.

Nanoq, Greenland

It was sad for the town of Narsaq and Greenland when in 2008 the local brewery had closed its doors for good. And it was not less sad to see it fall apart. When Gerhardt Petersen and Jørgen Wæver Johansen feared that the estate of the company should be sold to a foreign company, and subsequently be dismantled and moved out of Greenland, they put an effort to find investors to bid for the estate. Much was invested in new equipment, so the brewery quality was upgraded and again became operational, and in mid-July 2011 to begin brewing the first Nanoq Beer under the supervision of Brewmaster.

The name Nøgne Ø means "naked island", a poetic term used by Henrik Ibsen to describe any of the countless stark, barren outcroppings that are visible in the rough sea off Norway's southern coast. We think the name also gives a symbolic picture of what the two Norwegian home brewers did early 2002, when they decided to found a new brewery. Nøgne Ø's subtitle - "The Uncompromising Brewery" is a plain statement of our mission to craft ale of highest quality, personality and individuality. The alchemists realized that they could only create gold from gold – so have we. Our gold is Maris Otter; Cascade, Centenneal, Chinook and Columbus. We think Maris Otter is the best malt obtainable, hand malted barley in the traditional manner in the UK. The big C’s are full flavored hops, grown in the USA. We only use ingredients of highest quality in order to make beers of uncompromising quality.

Our beers are craft brewed, prepared in small batches using a 20 Hectolitre brew house with four 40 Hectolitre Unitanks and one 40 Hectolitre Bright Beer Tank in a 4,200 sq. ft. facility. Our brewing equipment is custom engineered, stainless steel, high-tech and most importantly, Canadian made. The brew house is the hot side of the brewing process. It consists of a Mash Lauter Tun, the Brew Kettle, and the Hot Liquor Tank. The brew house is heated with a steam boiler, and at peak performance, the entire building gets extremely warm. Then there is the fermentation aging area that is the cold side of the brewing process. It contains four Unitanks and one Bright Beer Tank. All of these tanks are glycol jacketed and insulated. This area is cooled using a ten-ton glycol chiller.

In the fall of 2002 Raphaël Mettler, was not a keen beer drinker yet. Then he discovered that it is possible to brew at home in small batches and that’s how it all started. Raphaël purchased a brewing kit from Richi Leder from Sios who helped him grasp the brewing process basics. Among the first few experiments were some good ones and some, ahm, less good ones. After about 18 months brewing beer regularly(every Saturday or other Saturday) Raphael decided to purchase a brewing plant from Kaspar Schulz in Germany.

The Tuatara brewing scheme is not difficult for the uninitiated to grasp. We brew true to style, so wherever possible we go direct to the source and use the ingredients that have made that style famous. It says Bohemian Pilsner on the bottle not because it reads poetry and plays the bongos but because that’s where the yeast is from. Likewise our 6.5% Ardennes Belgian ale. And of course everything is created using nothing but yeast, malt, hops and water, the regime the Bavarians call Rheinheisgebot and have been enforcing since 1516 in the way Bavarian regimes tend to be enforced.

Our family has farmed 600 acres high on the Yorkshire Wolds for generations. With revenue from traditional income streams falling, we concluded that diversification was a necessity.

We spent 12 months researching our vision to produce Yorkshire’s best real ales and in 2003 Wold Top Brewery brewed its first ale in a converted barn. Eight years on, we have won several awards and are proud of our range of all year round and special edition cask and bottled beers that include Wold Top Bitter, gluten free beer Against the Grain and Golden Summer.

 

The character reflects the fact that the pure, chalk filtered water travels only metres from a borehole to the brewery, that the barley is exclusively Wolds grown and malted by family maltsters and that selected British grown hops impart a distinctive flavour.
